Mexican Wedding Cookies
Every holiday season in every home in Mexico you can find this delicious treat. It is such a meltingly tender nut cookie rolled in confectioners sugar after you bake them which reminds me of snow and holidays. Also, this is the most popular gift to your neighbor, friend, doctor.. you name it. Easy to bake, it is a classic every Holiday season.
Mexican Wedding Cookies
Yields 24 little cookies
1 1/2 cups of pecans
2 cups of flour
1 cup of unsalted butter (room temperature)
1/3 confectioners sugar plus coating
1/2 tsp salt
1 tsp vanilla from Mexico
1 tsp water
Pre-heat the oven at 325 F (160C). On a food processor, ground finely all the pecans and set a side. Sift the flour into a small ball and also set a side. On your stand mixer using your paddle attachment, soft the butter with the confectioners sugar and salt on a medium speed, once it is soft add the vanilla and the water. Make sure to scrap it all down so it can mix well. On a low speed, add the pecans and mix for like a minute then add the flour and mix until well combined.
Use a spoon the size of an inch and make little balls placing them in the baking sheet and bake them for 30 min until golden brown. Once they are done transfer to a rack to let them cool for 30 min.
In a small bowl, sift some confectioners sugar and toss the cookies in the sugar to have a good coat. Do it twice so they are fully covered. Enjoy!
